Brendan McCool


Brendan McCool is a 22-year veteran in the hospitality industry. His career began while still in high school working for a family restaurant as front of the house support staff. During college, Brendan progressed from server to bartender, which he continued after graduation.

In 2001, Brendan was given the opportunity to shift from bartending to restaurant management by joining Capital Restaurant Concepts, based in Washington, D.C. There, he served as General Manager of several Paolo’s Ristorante units.

After 8 years at Paolo’s, Brendan left the ‘big city’ and it’s commute, and fled to the ‘burbs’ joining Victoria Gastro Pub, in Columbia, MD, where he is Senior Operations Manager. Since 2010, he has personally developed VGP’s Wine and Craft Cocktail Program. The following year, at The Restaurant Association of Maryland’s Gala Awards Ceremony, Victoria Gastro Pub was selected as the Wine and Beverage Program of the Year recipient. This award honors the Maryland restaurant that:

• Is distinguished by the quality, diversity, clarity and value of its beverage program.

• Demonstrates a beverage program that best suits the cuisine and style of the restaurant, while enhancing the dining experience.

• Exemplifies leadership with ground breaking education of its staff.

Brendan’s beverage focus at the Pub is to create fun and exciting cocktails that utilize local and seasonal ingredients.  He enjoys the fast pace and continuously changing atmosphere of the restaurant business and can’t imagine doing anything else with his professional life.
